Granny’s ‘No-Bake’ Cookie Dough Pretzel Bites

Hello there, darlin’! Pull up a chair and pack yourself a bowl, because today we’re talking about one of your favorite salty sweet snacks that comes out of Granny’s kitchen. 

I’ve been baking up sweet treats longer than most of you have been tying your shoes, but sometimes a gal just doesn’t want to turn on that big ol’ oven. That’s where these No-Bake Cookie Dough Pretzel Bites come in. They’re the perfect blend of salty and sweet, crispy and creamy, and best of all? No oven required. Just a little stirring, a little rolling, and a whole lot of love.

I remember making these with you, and your little hands reaching into the bowl for a sneaky taste of cookie dough when you thought I wasn’t looking. (Spoiler alert: Granny sees everything!) We’d line up the pretzels, roll the dough into little balls, and have ourselves a grand ol’ time dunking them in the melted chocolate. Of course, by the time we were done, more chocolate was on their fingers than on the pretzels, but that’s half the fun, isn’t it?

Here’s what you’ll need:

  • 1/2 cup (A stick) unsalted butter, softened to room temperature

  • 1/2 cup packed light brown sugar

  • 1/4 cup granulated sugar

  • 2 Tablespoons milk or cream

  • 1 teaspoon pure vanilla extract

  • 1 and 1/4 cups heat-treated all-purpose flour* (spooned & leveled)

  • 1/8 teaspoon salt

  • 1/2 cup mini chocolate chips

  • 40–50 pretzels (we used the S'mores flavor and YUM!)

  • 8 oz semi-sweet chocolate, such as Ghirardelli

Now let’s get to fixin’ these up:

  1. Heat treat your flour! You can pop the flour in the microwave, just make sure the temp of your flour reaches 165 degrees. 

  2. In a large bowl, beat that butter, granulated sugar, and brown sugar together until it’s light and fluffy, just like a cloud of sweet goodness.

  3. Stir in the milk and vanilla, then slowly mix in the flour and salt. Keep mixing until that dough comes together—it might be a little crumbly at first, but trust Granny, it’ll smooth out.

  4. Fold in those mini chocolate chips. This is where things get good!

  5. Roll the dough into little balls—about two teaspoons worth per sandwich. (Or, if you’re feeling extra generous, a little more. I won’t tell!)

  6. Sandwich each dough ball between two pretzels and place them on your baking sheet. Pop ‘em in the fridge for about 20 minutes. This makes them easier to dip.

  7. Dip each pretzel bite halfway into the melted chocolate and place them back on the baking sheet.

  8. Stick ‘em in the fridge for at least 10 minutes to let the chocolate set.

And there you have it—perfect little bites of heaven!
